Vegetarian Chickpea Salad


1 (15 ounce) Can chickpeas

(garbanzo beans), drained

1/2 onion, chopped

1 cup black olives, sliced

1 cup of cherry tomato, chopped

1/2 cup Lemon juice

Parsley chopped

Basil leaves, chopped

1/2 cup Extra Virgin Olive oil

Salt and pepper


In a medium bowl combine chickpeas, onion, tomato, black olives. Prepare the dressing with salt and pepper, lemon juice and ½ cup olive oil. Mix all together and pour over the salad. Mix well and serve
